Honey Maple Glazed Carrots

What do you get when you add honey and pure maple syrup to one of the healthiest foods on the planet? Naturally delicious and sweet Honey Maple Glazed Carrots! Dressing up these humble but hearty root vegetables will turn plain carrots into a dish your family will be sweet over!

I should probably just start out by admitting this to you… I DO NOT LIKE CARROTS. I do not like them, Sam I Am.

The only way I can typically tolerate carrots are when they are super finely shredded in a salad, mixed into fried rice, or in steamed California Blend veggies smothered in cheese or popcorn seasoning. But knowing that 2 of my boys and my husband all enjoy carrots made me decide to put on my big girl pants and try something new. (Especially since I’ve been feeding them my favorite, sweet potatoes, in every recipe under the sun like Cinnamon Sweet Potato Home Fries or my Sweet Potato & Apple Breakfast Hash.)

So my frenemy, Pinterest, and I got together and found a gazillion carrot recipes.

Some just didn’t have enough of anything to drown out the taste so those definitely weren’t going to make the menu.

Some had honey.

Some had maple syrup.

Since I’m a carrot hater trying to make a family of 5 eat something only half of you like… I decided we’d use both honey AND maple syrup.

I mean, c’mon, it’s not that much of either one. And I’m pretty sure using pure ingredients means the sugar calories don’t count. Wink, wink.

But let me just say that these carrots are so dang good, I couldn’t get enough of them. My parents joined us for dinner the second time I made them. Not knowing how much my dad loves cooked carrots, the family literally couldn’t get enough of them. Grandpa was devouring them!

So yah, try this recipe. It actually makes carrots delicious. The little bit of honey and maple syrup enhance the natural sweetness of carrots in a super simple side dish you can have ready in 15-20 minutes.

Honey Maple Glazed Carrots

Ingredients

  • 1 pound carrots
  • 1 Tbsp salted butter
  • 3 Tbsp honey
  • 1 Tbsp pure maple syrup
  • 1 Tbsp lemon juice
  • 1/2 tsp dill weed

Instructions

  • In a medium saucepan, place carrots in 1 inch of water. Heat to boiling; reduce heat to low. Cover; simmer 10 to 15 minutes or until tender. Drain well.
  • While carrots are draining, add honey and maple syrup to saucepan. Bring to a boil.
  • Add carrots, butter, and lemon juice to saucepan. Cook, stirring frequently, until butter is melted and carrots are glazed.
  • Spoon glazed carrots into a serving dish. Garnish with dill.
