And it really doesn’t get any easier than cubing up the potatoes, tossing them with Extra Virgin Olive Oil, spreading them on the pan, sprinkling on two tons of cinnamon, and letting their amazing aroma flood your home!

Cinnamon Sweet Potato Home Fries

Cook Time:35 mins
Total Time:50 mins
Yields: 5

Ingredients

  • 4 large sweet potatoes
  • 2-3 Tbsp. EVOO
  • Cinnamon

Instructions

  • Cut sweet potatoes (skin on) into cubes.
  • In a large bowl, toss the potatoes with the oil.
  • Coat a baking sheet with cooking spray and spread the potatoes in a single layer.
  • Sprinkle cinnamon to cover potatoes.
  • Bake until crisp, about 35 minutes.
  • Remove home fries with a spatula and enjoy!

Notes

If potatoes are too firm to cut easily, microwave for a couple minutes to soften.
